What's Up Cupcake?

It is no secret to anyone that knows me that I am a cupcake fan.  Not so much the eating, but the baking part of it.  I love new recipes and unique flavors thrown together in little batches of fun.  Making Cupcakes with Lola by Victoria Jossel and Romy Lewis is a dream cookbook for me.

LOLA's is London's most fashionable cupcake bakery. Victoria Jossel and Romy Lewis, the creators of the company, and their dedicated team spend months sourcing the finest quality ingredients and each cupcake is baked fresh in small batches early every morning to be sold in some of London's chicest retailers. The simple yet sophisticated LOLA's style is a reflection of how fresh their cupcakes are and this delectable book will let you bring some LOLA's magic into your kitchen. There are 65 totally delicious yet very easy recipes for a wide range of cupcakes and mini-cupcakes. Recipes are given for their bestselling flavors, including coffee, banana, chocolate, carrot, lemon, and vanilla, along with specials like the Elvis, strawberry cloud, rocky road, and choc 'n' cherry. Each cupcake is smothered in gorgeous buttercream icing and topped with cute sprinkles, hearts, stars, chocolate curls, and more.

In the early 21st century, a trend for cupcake shops, which are specialized bakeries that sell little or nothing except cupcakes, developed in the United States, playing off of the sense of nostalgia evoked by the cakes. A lot of people now opt for cupcakes at their weddings and events because they are easier to serve.

We made the Acai Berry cupcakes from Making Cupcakes with Lola.  I always have Acai frozen pulp on hand for my other addiction (smoothies).  I whipped up this batch and had my daughter help.  She had a ball, and I was digging the purple color.
The recipes in Making Cupcakes with Lola are easy to follow and include fun combos that any family is sure to love.  Grab this book and bake away.
